Primal chocolate mousse

I picked this up on 'Mark's Daily Apple' (the Primal Blueprint blog) http://www.marksdailyapple.com/forum/to ... rom-france.

It uses very dark chocolate - he suggests 78% but it may be possible to use cocoa powder or 100% pure coca if you can find it and some sweetener of your choice. If using cocoa powder I would suggest adding a little more butter, adding it to the melted butter and tempering it by cooking it briefly. You would need to cool it slightly before adding the egg yolks.

The J D Gross 81% choc I get from LIDL is about 25gms for the 125gm (4oz) bar so between 4 servings would be about 6gms each plus a miniscule amount in the cocoa and eggs.

If you use cocoa and sweetener instead of the chocolate then the amount of carbs would be considerably less.

INGREDIENTS:

2 oz butter
5 oz dark chocolate
3 eggs

PROCEDURE:

1. Start melting butter and chocolate together. I suggest using a double-boiler, but anything that'll make sure they don't burn should be fine.

2. Separate eggs. Mix yolks in one small bowl; in a separate (larger!) bowl, whip the whites until they're quite firm.

3. Mix the hot melted butter & chocolate together and remove from heat. Then slowly pour the yolks into the butter/chocolate, stirring all the while, so you have a homogeneous mixture. The yolks cook a bit in this step.

4. Gently fold the butter/chocolate/yolks into the whites.

5. Refrigerate (covered if possible). For a single batch, 3 hours is probably sufficient to get it to set properly.

This recipe makes a very rich mousse; a fairly small serving suffices to satisfy!

I just made this the other night for the first time since going primal, and it was excellent, even though I screwed up and only put in half the butter. Great success! FWIW, I used 78% cocoa dark chocolate from Santa Barbara Chocolate Co., and it was plenty sweet; my non-primal guests loved it, or at least made convincing noises to that effect.

This recipe might also be good if made with coconut oil instead of butter; if you try making it that way, please let me (and the world) know

Just to say that I tried using cocoa powder, butter AND coconut oil, but the result was pretty 'floury'. I think it would need at least a bit of actual bitter chocolate added to it to make it smoother.

As it is late i only mixed the cocoa and fats together - I will finish it tomorrow. I suppose it is possible that made up with the eggs it might have tasted a bit better, but I am pretty sceptical about that.

I wish you could buy raw unsweetened chocolate at a decent price rather than the exorbitant price that is charged for the 'novelty' of it. It needs some people to start selling it in bulk from other sources and then the price would come down. It's just a gimmick at the moment. Comes to something when I can buy a bar of 81% for under 80p per 100g, which has gone through refining and processing and has added ingredients, yet an unrefined block of raw chocolate costs over £7 per 100g!

The fact that you can buy 250gms cocoa powder for 99p shows exactly how cheap it really should be! Ok, it contains no cocoa butter, but that can be bought for about £1.25 per 100gm so isn't hugely expensive and raw chocolate hasn't had to go through the separation process.

Another addendum. I did finish it using the choc and cocoa mix and it was fine. Very nice actually. It did four generous servings but could well have been eked to 6 smaller ones.
