Granola

Postby Marmot » Fri Jun 25, 2010 1:51 pm

I made this today - had it for lunch (don't ask!), three dessertspoons with two heaped spoons of Lidl Greek yoghurt, a spoon of double cream, a few blueberries and a spoon of raspberries. I though I had gone to heaven..............try it folks, it is truly delicious, amount makes loads and very easy to do.
Yum, yum! :D
I have put a link to the thread the recipe link is in!
Thanks Karen!!

I used to be totally hooked on a cereal called Jordans Country Crunch and missed it so much, even a tablespoon would make me spike.

Granola saved the day for me, its worth a try if you miss cereals. You can alter the ingredients, eg substitute walnuts for some other nuts or seeds, or leave out the coconut or whatever suits your taste.
I have made granola sometimes with eggwhite stirred in so it sticks together in clumps and also add the flax seed a bit later, they dont like being heated up.

Its lovely, as Janet says with some berries or rhubarb added, eat with any milk, yogurt, cream, my colleague at work pours coconut milk over hers.

All the best
Karen

Hi Graham,
I can't take carbs on a morning usually, this was at lunchtimeas I made it this morning and it smelled so good I couldn't wait to try it. I am going to try it tomorrow without the berries for breakfast and see what happens. It isn't a commercial granola, I got it from Karen's link but is easy to make and contains our good old friend flaxseed. I will let you know how I get on.

Morning experiment with granola.........didn't add any fruit so I could be sure that any spiking was due to granola and not fruit.
Fasting - 5.7, 1 hr later 5.2???, half an hour later 6.8, but at 2hrs, 6.2!
This will be on my menu for breakfasts now, packed full of goodness too. I kno wI have high insulin resistance, usually 1 egg and 2 rashers of bacon cause a rise of 1.5 points, can be nearer 2 on a morning.
Granola and red grapefruit seem good for me.....

Hi Red,
Use whole flax seeds, the granola is great and it makes tons, you only need a couple of spoons as it is very filling mixed with the yoghurt & cream etc

Hi and welcome Diadeb, you can get flax seed from Sainsburys it's rather expensive at £2.30 for 175g, Holland & Barrett also stock it.

Cheers

Hi Diadeb

And a warm welcome. If you want the plain and not ground flax seeds, they can be obtained from most supermarkets. I get mine from Waitrose at £1.99 for 500 grams.

All the best, Mitch
