Crunchy Nut & Seed Granola

A "stick" of butter is equal to 125 grams. My slight variation is to do the toasting process, cool, then add some dried cranberries. My first attempt I put them in to the toasting process and ruined the dried cranberries.
I find I only need 4 heaped tablespoons with milk for breakfast and it leaves me feeling full.

Just had a look at his other low carb breakfast suggestions and I am now dreaming of the French Toast done with the Psyllium Husk Bread. I am thinking---- tomorrow, topped with a little stewed rhubarb! Roll on Wednesday morning......

I looked at the recipe and I find I'd have to modify it.Dessicated coconut is one of the very few foods I loathe so much I can't eat even a little bit.
thanks though. I'll hunt up the psyllium husk bread now.

One thing - what is vanilla powder and where would I get it? or maybe I could use vanilla essence - what does anyone think?

I have never seen vanilla powder so just use the vanilla extract or essence. Must be another Ameican thing! My husband has found the Granola so I have to make twice as much now.

I made something very similar a weel or so ago following a recipe in one of Rose Elliot's low carb books. It was really nice, I'm planning to make some more later today. I have been eating it with my kefir instead of milk or yoghurt.

I melted the butter and added a couple of drops of liquid stevia as a sweetener and some liquid vanilla essence and mixed it all together before adding to the nuts and seeds. I added the cinnamon to the dry ingredients before cooking it. It took waaaaaaaaaaaaaaay longer to cook to a golden brown than the recipe said.

I have no idea what vanilla powder is, but I do have some vanilla flavour soy protein powder which I have been using to cook with - I have been using it in my pancakes.

Thanks for the replies.

I have stevia powder and find it bitter - although I haven't used it for baking, would you say the stevia liquid is better? It's that aftertaste thing.

I have not tried the powder, I have only tried the liquid stuff. I get an aftertaste if I use too much.
